Romanesco zucchini: a nutty Italian variety

The Romanesco zucchini, originally from Italy, is distinguished by its green-gray-ribbed fruits flecked with pale green, weighing around 3 kg. This variety is appreciated for its nutty flavor and good texture, while its ribbed slice adds a decorative dimension to dishes. It reaches maturity in 50 to 60 days.

Sowing and growing

Romanesco zucchini seeds are sown in April, in pots, in a light location with a minimum temperature of 12°C. For optimum germination, seeds should be placed on edge. At the 3 to 4-leaf stage and after the frosts, the plants are transplanted at a distance of 1 metre in all directions to ensure good development.

Harvesting and tips

Romanesco zucchinis are harvested around 2 months after sowing. It's best to harvest young zucchini to avoid bitterness. The younger a zucchini is harvested, the more tender and flavorful it will be.
